Wines, Then and Now (not a poem)
The time is 2700 BC. Thousands of years after the first fermentation of grain in China, the Babylonians have now developed a fermented grape beverage and even worship a wine goddess. Alcoholic beverages have long been associated with socializing and ritual, but in our time we now know the scientific benefits of moderate drinking. For example, a study in the Journal of Age and Aging found that moderate amounts of alcohol may actually protect against dementia. Equally compelling, researchers found that moderate drinkers are less likely to suffer from 12 heart and circulatory conditions such as angina, heart attack, heart failure, or ischaemic stroke, compared to teetotalers. Everything in moderation of course.
Fun fact: women process alcohol differently, as we don’t have the same version of alcohol processing enzyme alcohol dehydrogenase (ADH) as men. As such, women need to be more aware of their consumption.
I’m currently enjoying moderate amounts of wine, both red and white with dinner. White wine is primarily made with white grapes, and the skins are separated from the juice before the fermentation process. White wine pairs well with more delicate flavors and is a favorite among women. White variety grapes are also most commonly used in the production of sparkling wine, such as champagne or Prosecco. The carbonation is produced through a double-fermentation process. As we all know, bubbly is known to be enjoyed for celebrating special events and marking special dates. You don’t actually have to spend a lot to make it special, however. I most recently tried an Italian sparkling wine by Brut Reserva by Trento DOC, which has a 36 month second fermentation to produce the bubbles. I was pleasantly surprised by the full and complex flavor at a reasonable price point.
Red wine is made with darker red or black grapes, and the skins remain on the grapes during the fermentation process. Typically reds aren’t subject to a second fermentation as sparkling reds are far less popular than sparkling whites or even pinks 💕. Red wine has more tannins than white and can boast a very diverse flavor profile. Currently I’m enjoying a smart and sweet Italian 🇮🇹 Chianti from Frescobaldi Castiglioni. Well paired with any homemade fare, it’s truly versatile and easy to love.
